92Y Fridges - Episode 4: André Soltner

We are happy to bring you the fourth installment of the 92Y Fridges video series. André Soltner of Lutèce fame and current Dean of Classic Studies at the French Culinary Institute invited us inside his Upper East Side abode for a peek inside his kitchen and refrigerator. Youll see all the basics...fruit, chocolate, bread, cheese. But he also imparts a few secrets, such as his choices for salt, and why he does not bother to bring wine back from Europe, but instead, vinegar. Soltner, originally from the Alsace region of France who has been cooking for 60 years, is known for his simple approach to food. He abhors using using frozen or canned goods and wisely advised: I always say, you better [off] eat grated carrots which are fresh, then frozen caviar. He doesnt need or desire fancy equipment in his kitchen, and uses a small gas stove, the right knife for the right job, and a good pan. The fancy stuff, thats for amateur chefs, he told the New York Times in 2004, they need gadgets. I have 50 or 60 knives and I use just one. Read more: blog.92y.org

92Y Poetry Center Archive: www.92y.org I can write a small book more easily than a letter—why is that? "As though I'd stumbled upon a lost Bellow masterpiece." So said Philip Roth after "hungrily" reading through the recently published Letters of Saul Bellow. Saul Bellow first appeared at the Poetry Center in November of 1956, reading from a novel-in-progress that would become Henderson the Rain King. Upon the book's publication, in 1959, Bellow wrote to his friend Ralph Ellison about its critical reception: The fighting about poor Henderson has been fierce and wild, and to make matters worse I'm not quite sure where I myself stand. For I'm not in possession of my head and don't know what parts of the book originate in gaiety and which in desperation. It's easy enough to see through the prejudices of the critics and to assess their vindictiveness against the new and the unexpected, but it's not as though the book occurred as a pure act of the imagination. . . . I'm inclined to set the whole of Henderson down to dizziness and begin to think of a new start. Bellow's second appearance at the Poetry Center didn't come until 1988. By then, he'd written Herzog and Mr. Sammler's Planet, won three National Book Awards and the Nobel Prize. Today's featured recording is an excerpt from that 1988 appearance, when he read from Humboldt's Gift. "The book of ballads published by Von Humboldt Fleisher in the Thirties was an immediate hit," writes Bellow in the novel's opening sentence <b>...</b>

www.92Y.org This recording is an excerpt from a 1989 appearance at 92Y, when John McPhee read from Rising from the Plains—the third volume of his geological tetralogy, Annals of the Former World. In the narrative table of contents to that book, which was some twenty years in the making, he wrote that: Rising from the Plains is primarily about Wyoming, which includes within its borders an exceptional range of geology. It's about the roadcuts of the interstate but also about Jackson Hole and the Tetons and the Powder River Basin and the Wind River Basin and the Laramie Range and David Love and his father and especially his mother, who educated her children at Love Ranch, a very long ride from neighbors, in the geographical center of Wyoming. She was born in 1882 and died long before I would have had a chance to meet her, but she is probably the most arresting personality I have encountered in the course of my professional work. McPhee refers to his guide David Love as "the Grand Old Man of Rocky Mountain geology." Love's mother—this "most arresting personality"—is Ethel Waxham, and after McPhee had spent some time in Love's company, he let him read Waxham's journal, which tells the story of: A slim young woman who is not in any sense a geologist [stepping] down from a train in Rawlins, Wyoming, in order to go north by stagecoach into country that was still very much the Old West. She arrived in the autumn of 1905, when she was twenty-three. Her hair was so blond it looked <b>...</b>

Lawrence Summers at 92Y: Rising Inequality Sinks All Ships

Lawrence Summers, former Harvard president and economic advisor to Presidents Clinton and Obama, offered qualified support for the Occupy Wall Street movement while not always agreeing with its rhetoric and tactics. He summarized his position: "the issue of rising inequality and what it means for the middle class that's the underpinning of democracy, my judgment would be that once we get out of this downturn, that's going to be the issue that animates economic discussion for a very long time." The goal to wipe Israel off the map is an overt objective of radical Islam. What should be done to confront this threat, which is diametrically opposed to values of citizenship, human rights and basic notions of democracy? Charles Small is the founder and director of the Yale University Initiative for the Interdisciplinary Study of Anti-Semitism and a lecturer of ethics, politics and economics at Yale. Bret Stephens is a writer and editor for the Wall Street Journal.
