Up-and coming chef Simon Horn has been cooking away at the "Blumen" restaurant in Frankfurt since 2004. Restaurant Blumen / Frankfurt am Main Ingredients: 4 ox cheeks 3-4 carrots 1/2 stick of celery 4 garlic cloves 2 red onions 2 twigs of rosemary 6 twigs of thyme 5 bay leaves 1 tin of tomato puree sugar clarified butter 1 litre of red wine Preparation: Remove the coarser sinews from the ox cheeks with a sharp knife, heat the clarified butter and sprinkle in some sugar. Wait until the sugar has caramelized and then add it to the ox cheeks. Add coarsely chopped garlic. Let the cheeks turn golden brown before setting them aside. Place the coarsely chopped onions, carrots and celery in the saucepan, braise the vegetables and add tomato puree. Then add the herbs and then douse with half a bottle of red wine (berry-flavoured, with some acid) and then allow the mixture to come to a bubble. Then add more tomato puree and douse the mixture with the rest of the red wine. Place the ox cheeks back in the saucepan and add enough water to cover them. Braise for two-and-a-half hours. Remove the ox cheeks carefully and then finely sieve the sauce, taste it and if necessary cook for a little longer or add a little more red wine or a dash of brandy. For the potato salad The dressing: 1/4 packet of finely cut herbs (eg borage, sorrel, burnet, chervil, chives, parsley, cress, lemon balm, lovage) 1 tablespoon of medium hot mustard two diced white vineyard peaches two diced dried tomatoes 1 <b>...</b>

The menu at London's Vanilla Black vegetarian restaurant is proof that it's possible to have delicious taste sensations without any meat in the dish. Chef Andrew Dargue tells us how to make a great vindaloo. Pakora 1 cup mixed vegetables and herbs (mint, sage, tarragon, onions, carrots, courgette) 2tblspoons medium curry paste (eg Pataks) 3 tblspoons chickpea (besan) flour 3 tblspoons extra virgin olive oil salt, pepper, sugar Chop herbs and vegetables roughly and add to a mixing bowl. Add curry paste and mix in flour. Season with salt, pepper and sugar and add oil. Allow to stand for 20 minutes and you will see that the mix will change consistency. Adjust by adding more flour or water to create a thick vegetable batter. With 2 spoons create small mounds and add to hot (180c) sunflower oil till golden and cooked through. Risotto 150g Arborio rice Warm water ½ teaspoon saffron filaments 50ml whipping cream 75g finely chopped onion Salt and pepper Add onion to pan and sweat down till soft. Add rice, stir to coat in oil then add saffron. Immediately add a little warm water and stir in. Keep adding water as the mix thickens and cooks. When the mix is cooked but still thick thin down with cream. Re heat and season with salt and pepper. Sweet Potato and Vindaloo 2 large orange sweet potatoes 2 red chillies 10 green cardamom pods 150ml distilled vinegar 100g granulated sugar 3tblspns curry paste In a stainless steel pan add the vinegar, cardamom and chillies and simmer for 5 <b>...</b>

And it's from one of Germany's top chefs! Turbot and salmon roulade in herbs (Serves 4) Recipe from Dieter Müller at the Lerbach Schlosshotel near Cologne. Ingredients: 400g turbot filet 120g salmon filet 50g herbs, finely chopped (parsley, chervil, tarragon, basil, thyme) Fish paste: 50g turbot off-cuts, refrigerated 5cl lightly frozen cream 1 tablespoon chopped herbs Lentils: 60g green lentils 60g red lentils 60 yellow lentils 1 tablespoon olive oil 1 tablespoon chopped shallots 2cl fish stock 20g cubed butter White balsamic Freshly milled salt and pepper Sauce: 1cl fish stock 8cl cream 20g cubed butter 2cl lemon olive oil 2cl Noilly Prat 2cl white wine 1/1 teaspoon cornflour 2 tablespoons violet mustard Freshly milled salt and pepper Instructions: Slice the turbot filet into two portions, approximately 14cm x 12cm and 5cm thick. To make the paste, put the fish off-cuts, the herbs and a pinch of salt into a blender. Add the lightly frozen cream and blend to a glossy, green paste. Add the lemon and season with salt and pepper. Place the turbot filets onto the cling film, season with salt and pepper and spread a thin layer of paste on top. Slice the salmon fillet into finger-sized strips, season and arrange them on the turbot. Roll the fish filets together, and roll in the herbs. Wrap in cling film and aluminum foil. Twist the ends tight to seal the parcel. Simmer in water for seven minutes and then allow to rest for three minutes. For the sauce, reduce the Noilly Prat <b>...</b>
