Eating certain foods for halting the growth of cancer-feeding blood vessels could be key to treating tumors, according to Dr. William Li, head of the Angiogenesis Foundation http Blood vessels, literally the lifelines in our bodies, deliver the nutrients our organs need to survive. But they also feed cancerous growths. Cancers don't start out with a blood supply. Instead, they begin as tiny nests of cells that if given a blood supply will grow into cancer. Without a blood supply, most of these cancers will never become dangerous. What does this have to do with Bok Choy? Dr. Li is conducting a million person study, the world's largest study on cancer prevention with foods. One of the foods that he has studied that has great potential for preventing cancer from growing is bok choy. I was thrilled to learn this, because it's one of the easiest vegetables to prepare and delicious at that.

Ratatouille Salad With Japanese Eggplant


This versatile menu addition can be served hot or cold. Ingredients: 1 (1-lb.) eggplant 1/4 cup balsamic vinegar 2 teaspoons minced garlic 1/2 teaspoon salt 3 cups diced tomato 1/2 cup chopped green bell pepper 2 tablespoons chopped fresh basil 1. Heat grill. Peel and slice eggplant into 1/2-inch slices. Pour vinegar into large bowl. Dip each eggplant slice into vinegar, coating both sides. Reserve remaining vinegar; set aside. 2. Place eggplant slices on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook, turning once, 8 to 10 minutes. Remove from grill; cool. Cube each slice. 3. Add garlic and salt to reserved vinegar. Add eggplant, tomatoes, bell pepper and basil, mixing lightly to blend. Chill several hours or overnight. Ingredients- 250gm potatoes Parval Water 2 tsp coriander powder 1/2 tbsp red chilli powder 1/2 tsp asafetida powder 1 tsp cumin seeds Few coriander leaves 1/2 tbsp turmeric powder 2 tbsp oil Salt to taste Preparation- In half cup warm water mix all the dry spices together - coriander powder,red chilli powder,turmeric powder. Heat the oil. Add asafetida and cumin seeds. Further add the dry spices mixed in water to the pan and mix well. Add the potatoes and parval. Add salt and water. Cook for 5-6 minutes. Garnish with coriander leaves.
