The term soused herring usually means 'soaked in a mild preserving liquid', and can be used to refer to raw herring in a mild vinegar pickle or the famous Dutch brined herring. As well as vinegar, the marinade might contain cider, wine or tea, sugar, herbs (usually bay leaf), spices (usually mace), chopped onion. The word 'soused' can also describe a marinated herring that has been cooked. The herring can be baked in the marinade or fried and then soaked in it. It is served cold. The soused herring (maatjesharing or just maatjes in Dutch, or matjes in German and Swedish) is an especially mild salt herring, which is made from young immature herrings. The herrings are ripened for a couple of days in oak barrels in a salty solution, or brine. The pancreatic enzymes which support the ripening make this version of salt herring especially mild and soft. Sea this video has a bit of everything, with River 2 Sea Jigs, Wolf herring and Even Gar on wogs. Bit of an unknown jigging technique, but the Wogs and lead heads, enable you to drop a bait down as well and work when the fish are holding deep. Knife Jigs such as the River 2 Sea are dropped to the bottom and a high speed retrieve is deadly on spanish Mackerel. When deep sea fishing and baits aren't working, try some jigging, a Bit of movement can save the day and can get the fish biting. A up and down, jerking technique with baits also work, and Jason's Wolf herring Jig didn't last long and was also smashed. After the Cosco Busan Oil spill in 2007, herring numbers in San Francisco Bay crashed. Drought and lack of food also brought about the demise of the Bay's last remaining commercial fishery. After only a few years of protection, the herring have returned in an epic spawning event showing that it is possible to come back from the edge. Even Pier 39's famous sea lions vanished to avoid starvation. The Bay's fishing fleet caught their quota in under a month and the season is now closed, leaving a very happy population of birds, marine mammals and insects to enjoy the feast. Not to mention all those happy baby herring!
