How To Make Beef Jerky At Home

Jack Scalfani shows you how to do homemade beef jerky. PLEASE SUBSCRIBE TO THIS CHANNEL. IT'S FREE. Here is the recipe for the marinade that Jack used. Ingredients: 1 1/2 to 2 pounds flank steak 2/3 cup Worcestershire sauce 2/3 cup soy sauce 1 tablespoon honey 2 teaspoons freshly ground black pepper 2 teaspoons onion powder 1 teaspoon liquid smoke 1 teaspoon red pepper flakes (add more to make hotter) Special Equipment: 1 box fan, 2 paper air-conditioning filters, and 2 bungee cords or shipping tape Basically what you want to do is trim the meat of any fat. Then stick it in the freezer for about an hour or two until it's firm. You don't want it completely frozen, but this helps with the slicing. Cut long, thin strips WITH the grain. I know this is counterintuitive, but this is what you want to do for good jerky; we're not making steaks here. ;-) Mix all of the marinade ingredients together in a large zip-lock baggy, and drop in your meat. Ensure all the pieces are coated, and throw it in the refrigerator for about 6 hours. When 6 hours is up, remove the meat, pat the pieces dry and grab your filters. Lay the strips out in the grooves of the filter. Cover with the other filter, and bungee or tape the stack to your (preferable square) box fan. Turn the fan on high, and let it blow over the meat for 12 hours. After 12 hours is up, it's time to enjoy some delicious, delicious home made jerky.

How To: Beef Jerky Made Easy

Here is a simple and easy way to make homemade beef jerky. I use a Nesco Pro food dehydrator with adjustable temperature settings. The recipe is simple. 4 cups of Soy Sauce 1 pound of Dark Brown Sugar 1 bottle of Liquid Smoke Coarse Ground Black Pepper to taste. Use your beef of choice. I use Bottom Round Roast and have it cut on a slicer by the meat cutter on the #4 setting. I mix my marinade and add the beef. I let it set for about 2 hrs. I then load up the trays and set the temp setting on my dehydrator to 160 deg. I then dry the beef for 8 to 9 hours. When finished I let the trays cool down and I store the jerky in ziplock bags.

How to Make Beef Jerky

Don't pay for expensive, store bought jerky, that's loaded with nitrates. Here I demonstrate how to make beef jerky from ground round. Purchase the leanest ground beef you can find. Made from 97/3 which means 97% lean meat/3% fat. This meat is extremely lean but produced a product that did not need to have fat droplets blotted off after it had dried. Here's the recipe for this batch: BEEF JERKY FROM GROUND ROUND 3# very lean ground round 1 teaspoon black pepper 1 teaspoon ground red pepper (less if you don't like spicy) 1 teaspoon Lawry's Seasoned Salt 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon liquid smoke 2 tablespoons Worcestershire sauce 2 tablespoons low salt soy sauce 2 tablespoons Louisiana style hot sauce Blend all of the above. You can cover this mixture and let it sit for up to 24 hours in the refrigerator, but it's not necessary. Pat out jerky in desired shape, approximately 1/4 inch thick, or extrude using a jerky gun onto dehydrator trays that have been lightly sprayed with an aerosol release agent like 'Pam'. Jerky must be brought to 160 degree for at least 10 minutes. If your dehydrator does not reach 160 degrees, start jerky in the oven on an oven appropriate rack, then transfer to the dehydrator tray. Dehydrate at 160 degrees for 4 hours. Lower temperature to 135 degree until jerky is dry, approximately another 3-4 hours. Jerky is done when it breaks in two after it's completely cooled. Store in an air tight container, or in the freezer <b>...</b>
