If you don`t like protein powder at all and you are not picky with your carbs try semolina flour or a binding agent of your choice instead of protein powder. If you want to eat it cold, you should probably add some fat - I would put in a tablespoon of butter (or something like that) otherwise the cold cake would tend to be a little dry and I don`t like that. But hot you don`t need to add more fat. I chose a quark with natural amount of fat and suggest you to change this depending on your workout/daily schedule. I wouldn`t suggest the use of lowfat quark - it is very very dry in that case.
