From the HBO hit show The Sopranos, please a round of applause for... Katherine Narducci Beef Ragout Sauce Serves: 4 Prep Time: 5 Cooking Time: about 30 min. Ingredients: 1/2 Red Onion 1 Carrot 3 Tbsp Olive Oil 2 Handfuls of Fresh Basil 1 Can of Pelati 1 Lb of Premium Beef 1 Glass of Red Wine Salt, Pepper Preparation: Chop the onion and the carrot medium fine. Rinse well your basil. Slightly blend your can of pelati... Make sure you leave some chunks, it looks better. Cook It: Saute' the onion and the carrot on a medium-high flame, until the onion gets a nice golden color. Add the beef, and saute' it until it browns completely, then pour the wine. Sip Some Wine! Still on a medium-high flame, stir the meat and the wine, and let all the alcohol evaporate completely...you will notice its pungent smell fading away pretty fast...about three minutes. Add the pelati, salt and pepper, and some red pepper if you'd like to add some spice to it. Stir well, lower your flame to a medium, do not cover your pan. From now on it is just a waiting and stirring and sipping. Play a nice record, call your mate (or your pet) for a toast, and in a half hour dinner will be served. Garnish your plates with some freshly grated parmesan, the fresh basil and some good extra virgin olive oil. NOTES: - Do not use an extra lean beef...it will most likely come a little dry...you want to have just a drop of fat in your meat...it helps. - This dish makes a great leftover...cook more and freeze it. What's for Dinner? Beef Ragout Over Rigatoni


www.noreenskitchen.com Greetings! Tonight I am going to use some of that beef that I pressure canned the other day in a delicious dish. Beef Ragout is simply a hearty pasta sauce with shredded beef and some rather strong flavorings like peppers, capers, garlic and Kalamata olives. Really it is like a Putenesca sauce only with beef added. I couldn't be more happy with the quality, flavor and texture of the home canned beef! It is delicious and stands on it's own. I will certainly be "putting up" more of it as meat goes on sale. Now, realize, that I keep the ingredients in this dish on hand regularly. I always have roasted red peppers, capers and some sort of salty brined olive on hand. But if you don't, please do not be discouraged. If you want to make it as you see it, go to the grocery store, most deli sections have an olive bar. Take a little container and put a scoop of pitted greek olives, a couple pepper filets and if they have giant caper berries, get a couple of those, take them home and chop them up. You will most likely spend just a couple dollars on that container and you will be amazed at how wonderful the flavor of the sauce will be. Remember, you don't have to spend a lot of money to eat well. You only have to know the right strategies to achieve the end result. I hope you try this and I hope you enjoy it. Delft Blue Veal Ragout


This recipe and more at www.vealrecipes.com Servings 6 Servings Preparation time: 35 minutes Cooking time: 60 minutes Ingredients 2½ lb veal stew - cut veal in to bite size pieces 1.2kg 2 tablespoons butter 30g 1 tablespoon olive oil 1½ tablespoons white flour 2 cups water 2 beef stock cubes ¼ cup tomato paste 2 garlic cloves crushed 1 teaspoon dried marjoram 2 carrots sliced 2 celery sticks sliced 2 potatoes cut into bit sized pieces 1 cup fresh green beans - chopped 1 leek ( if available ) - sliced 2 small turnips - chopped ½ cup fresh parsley -snipped Directions Cut the veal into bite-sized pieces. Heat butter and oil in large saucepan. Add veal in a single layer and cook stirring until golden brown all over. (If necessary cook veal in batches). Remove the veal from the pan and drain all but 2 tablespoons of oil from the pan. Add flour to pan and cook stirring for 1 minute. Stir in water and crumbed stock cubes, tomato paste, garlic and marjoram. Bring to the boil cook 1 minute. Return the veal to the pan cover simmer for 20 minutes. Add chopped carrots, celery, potatoes, leek and turnips. Simmer for a further 30 minutes or until vegetables are tender. Stir in parsley just before serving. Serve in a bowl or on a plate with Papperdelle or Fettucine pasta ( cooking time 7 minutes ) Any cut of veal can be used for this recipe for example stewing veal chops or any cut of veal steak. Alors, je vous présente aujourd'hui une recette 100% improvisée, au fur et à mesure que je trouvais un "truc" dans le frigo, hop il finissait dans la marmite ;-) Et bien, le final, supeeeeer bon, j'me suis étonnée moi même hahhaha !! car j'ai déjà fait des marmites plus que ratées ! Un plat complet, chaud, pour une saison un peu "détraquée" fait chaud, fait froid, il pleut !! alors ça, ça m'a donné envie :) J'ai juste oublié de noter et mentionner dans la vidéo la dose pour l'eau, il faut que ça recouvre juste au raz vos pommes de terre, pas la peine dans mettre trop. Pour 2/3 personnes : - 8 pommes de terre moyennes - 2 gros oignons - 1/2 paquet de lardons - Huile d'olive - 1 escalope de poulet - 1 cs de curry en poudre - 2 cs de sauce bull dog - 2 feuilles de laurier - Une 20 taines d'olives vertes dénoyautées - Eau + bouquet garni Bon appétit :-) !!
