www.maangchi.com I picked some wild green onions in Inwood Hill Park and made this pancake. You can use any type of green onions for this. Enjoy the recipe! Ingredients (for 1 rectangular pancake about 6×7 inches): Green onions, flour, water, soybean paste, sugar, and vegetable oil. Directions: 1. Clean, wash, and drain a handful of wild green onions (or about 10 stalks of normal green onion). 2. Cut them into 5 inch long pieces. 3. Make batter by mixing ½ cup flour, ½ cup water, 1 ts soybean paste, and ½ ts sugar in a bowl. Mix well until the batter is smooth. 4. Place a non-stick pan on the stove and heat it up. 5. Add about 3 tbs vegetable oil to the heated pan. 6. Put the green onion on the pan parallel to each other, in the shape of a rectangle. 7. Pour the batter over the green onion evenly. *tip: If you want some seafood (chopped squid, mussels or fresh oysters) in your pancake add it on top of the green onion before pouring the batter. 8. While the pancake is being cooked, keep patting it, pressing it slightly, and keeping it in a nice shape with your spatula. 9. A few minutes later, when the bottom of the pancake turns crispy and golden brown, turn it over. 10. Happy Mothers Day! (better late than never right?) On Saturday we went to the farmers market and got some outstanding strawberries. I decided that I wanted to have strawberry cream cheese crepes for breakfast so, I made some and decided to take you along for the ride. These can be made for breakfast, brunch, dessert or any time you want an amazing, elegant yet simple something for that someone special! Here is what you will need to make this recipe: For the Crepes: 1 cup flour 1 ¼ cups milk 2 eggs 1 tablespoon sugar 2 tablespoons melted butter For Filling: 1 8 ounce brick of cream cheese softened ½ cup powdered sugar 1 tablespoon vanilla For Topping: 2 quarts strawberries sliced ½ cup sugar Splash orange juice if you have it Prepare the crepe batter by placing all ingredients in blender and mixing until completely incorporated. Prepare the filling by mixing the cream cheese, powdered sugar and vanilla with a hand mixer until smooth and creamy. Prepare the berries, by washing and slicing and adding sugar and OJ if preferred and stirring until well blended, let sit to allow the berries to release their juices and macerate. Heat a medium size non stick skillet add about ¼ cup of batter and swirl to distribute the batter to the size of the bottom of skillet. When the sides loosen easily with a spatula lift gently and flip. Cook on other side for 10 to 20 seconds until it stops sizzling. Remove to a plate. Repeat until the batter is used up. The perfect accompaniment to any number of fillings, these crepes are basic, adaptable and delicious! From GialloZafferano; Italy's most famous food website. The crêpe is a very ancient recipe of a French origin, which, according to the legend, dates back to the 5th century: at that time Pope Gelasius charitably fed some tired and hungry French pilgrims, who were arrived to Rome on the occasion of the feast of Candelora, by ordering that a huge amount of eggs and flour should be brought from the Vatican kitchens. In this way the first rudimental crêpes were created, which became then very popular in France. Basically prepared with few simple ingredients, such as eggs, flour, milk and butter, the crêpes are a versatile dish since, starting from the base recipe, they can be stuffed in a thousand ways and used in a thousand preparations, either sweet or savoury, rustic or refined. Pour into a high rim bowl the previously sifted flour (together with the sugar and the vanilla powder, if you're making the sweet crêpes), a pinch of salt and 2 cups (1/2 l) of milk (1). Korean Appetizer: Seafood Pancake (Haemul Pajeon) The Ingredients: 1 cup All Purpose flour (buchimgalu package) 1/4 cup Sweet Rice Powder 1 cup Cold Water 2 Eggs 6 pieces of Shrimp 5-6 pieces of Mussels 5 pieces of scallops or clam 1 cup of Squid 8 pieces of Green Onion 1 Red Pepper 1/4 Canola Oil Dipping Sauce 2 tbsp. Soy Sauce 1 tbsp. Vinegar pinch of Sugar Little bit of chopped green onion, sesame seed, and red pepper flakes 1. In a large bowl mix flour, sweet rice powder, eggs and water until smooth. You may need to add more flour or water to get the desired consistency of the pancake batter. Add the green onion to the pancake batter and coat evenly. 2. Heat the skillet over medium heat and coat the pan with a small amount of canola oil. Place some of the green onion and a 1/2 cup of batter onto the hot skillet. Place even amounts of seafood on top of the pancake and some thinly sliced red pepper. 3. Let it cook for 4 minutes, until the bottom is lightly brown. Flip and brown the other side and cook for an additional 3-4 minutes. *Make sure that all of the pancakes surface touches the skillet by pressing down on it with a spatula. 4. Once the pancake is done, remove from skillet and place on a plate. Cut the seafood pancake into 8 pieces with a pizza cutter and serve with the dipping sauce. How to make Ebelskiver (also ebleskiver, aebleskiver, æbleskiver)


This is a family tradition for Christmas eve, passed down from our Danish grandparents. According to Wikipedia, Æbleskiver (Danish meaning apple slices (singular: æbleskive)) are traditional Danish pancakes in a distinctive shape of a sphere. Somewhat similar in texture to American pancakes crossed with a popover, Aebleskiver are solid like a pancake but light and fluffy like a popover. The English language spelling is usually aebleskiver or ebleskiver. Ebelskiver Mix together: 1-1/2 Cups Flour 1/2 Tsp Baking Soda 1 Tsp Baking Powder 1/4 Tsp Salt Beat together with a whisk or fork: 1 Cup Sour Milk or Buttermilk 2 Eggs 1 Cup Sour Cream Combine with the dry and wet ingredients and mix until smooth. Put 1 tsp oil in each space in the ebelskiver pan and heat the pan until hot before adding batter. Cook until golden brown and turn over to cook the other side until golden brown. (Can be turned with a fork or two toothpicks.) Serve hot, right out of the pan. Dip in powdered sugar. You can also fill the inside with apples or jam by placing a tsp of filling in the center as soon as the batter is put into the pan, then push it down into the batter a bit with a spoon.

Ingredients: 2 cups all purpose flour 1/2 tsp baking powder 1/4 tsp salt 1 1/2 cups milk 8 tbsp melted butter 4 separated eggs Method: Combine flour, baking powder, salt, egg yolks, melted butter and milk; whisk together. Beat egg whites to stiff peaks. Whisk one third of egg whites into batter, then fold in second third. Once incorporated fold in the last of the whites. Cook according to instructions for your waffle baker. In the video I left out the butter... you don't always need to use it. If you are worried about eating too much butter, you can cut it down or leave it out altogether. What you sacrifice is a bit of flavour, and if your waffle baker is non-stick (as most new ones are) they will cook just the same.
