Domaine Duseigneur is a small family wine producer in the southern Rhone Valley just across the river from Chateauneuf-du-Pape, run by the brothers Frederic and Bernard (they also work with the famous French sommelier Philippe Faure-Brac). Frederic sees himself more as a farmer than a winemaker. The most important thing is what happens in the vineyard, that you have life in the vineyard, healthy vines. There is a big difference between traditional farming and organic farming. Biodynamic farming is one more step, as done at Domaine Duseigneur since many years. In biodynamics they use two preparations 500 which is specially prepared cow manure, diluted in water and sprayed in the vineyards in the autumn; 501, a finely ground powder of quartz. It is also sprayed, but in the spring. This helps the flowering of the vines. At Domaine Duseigneur they also use some further preparations, homeopathic infusions made from plants and herbs, eg nettles, horsetail, thyme, rosemary or other. These help the plants to fight diseases themselves. This is done instead of spraying with chemicals (sulphur or other). In biodynamic farming one is allowed to use both copper and sulphur, but in smaller quantities. These preparations are also believed to help the vines to better survive difficult weather (hot, cold, wet etc, that happens in the Rhone Valley). It is <b>...</b>

[E] Maestro, a new champagne closure by Duval Leroy and Alcan


www.BKWineTours.com *Come on a Wine Tour with us!* --- The launch of the new revolutionary, according to the launchers, champagne closure med from plastic and aluminium, no longer made from natural cork. It is called Maestro and is made by Alcan and the first champagne producer to use it is Champagnes Duval-Leroy. Presented by Duval-Leroy's export director Roger Begault. Not a cork, but a cap (capsule). You use a lever to open it and you dont risk getting the cork in your eye. You will still have the traditional champagne pop that everyone connects to opening a bottle of champagne. It is in fact a crown cork (beer bottle cap) under a plastic cover. The closure has been developed by Alcan Packaging Capsules in collaboration with Champagnes Duval-Leroy. It will eliminate all problems with corked bottles and is also much easier to open than the traditional cork. If it will be accepted by the customers remains to be seen. It is the same closure that is used for almost all champagnes when they are sur lattes aging in the cellars of the champagne houses. The wine in the very first bottle is Clos des Bouveries in Vertus of the vintage 2004 from Champagne Duval Leroy, one of their prestige cuvees. It is an area known for good food, good wine, olive oil, truffles and a beautiful landscape. On the wine side, much has happened since 1990, when Yugoslavia disappeared. Earlier it was important to make large quantities of cheap wine. Now there is a new generation of winegrowers, called The Young Wild, with new ideas, new technology, and new skills in how to make quality wine. There has been a revolution in winemaking in Croatia. There are two genuine, unique, autochthonous grape varieties in Istria: First, malvasia, or malvasia istriana (from Istria), a white grape variety making full-bodied and relatively aromatic white wines, but much more sophisticated than malvasia wines from many other wine regions. The typical red wine is made from a grape variety called teran (a relative to refosk or refosco). It used to give very tannic and heavy wines. Now there are many exciting new wineries making unique high quality wines from this grape with modern winemaking techniques. There are around 40 modern wineries in Istria and everyone is making a lot of experiments. The vineyard covers six hectares of vines, primarily sangiovese, but also some merlot, syrah and petit verdot. It is 58 hectares of vineyard in appellation controllee Gigondas, Vacqueyras and Cotes du Rhone, and some Vin de Pays. Eric and Christine have a fascinating story to tell - moving from traditional farming to organic to biodynamic; choosing to leave a long time relationship with the cooperative and start out as an independent winegrower. . . Christine tells the story of how Montirius came to work with first organic farming and then the biodynamic principles (based on Rudolf Steiner's theories). She explains some of the things it means how you do it what kind of treatments you do, what difference it makes etc. PART 3: LEAVING THE CO-OPERATIVE One day they decided that they could not work with biodynamic farming and vinify their wines in the co-operative. It is a relatively new winery in the Roussillon in the south of France that Tom Lubbe created some years ago (in 2002) together with Sam Harrop from New Zealand. Lubbe has previously been making wine both in South Africa and in Bordeaux and arrived some years back to the Roussillon to work with Domaine Gauby with Gerard Gauby (also in Calces). The vineyard is managed with biodynamic principles (just like Gauby). In our visit to the farm we learn how to prepare various duck specialities, for example foie gras, the famous fat duck liver (often preferred to the goose liver). You start with a whole liver, remove and spots or impurities, including veins You put in a conserve tin (can) and then cook it, slightly (60 degrees) if you want it mi-cuit or more if you want it sterilised and long term conserve. Then you must of course taste some of the gastronomic specialities of this region in a gourmet meal with us: Terrine de foie gras mi-cuit, sear fried duck liver (foie gras poëlé), with onion marmalade, duck liver pate (terrine de canard et foie gras), smoke-dried duck breast (magret de canard seché et fume), rillettes de canard, which is a sort of paté (actually, its meat that has been cooked in a long time in its fat). www.BKWineTours.com *Come on a Wine Tour with us!* --- Part 1 of the interview with Piero Lanza, co-owner (together with his sister) and winemaker at Fattoria Poggerino, a classic and biodynamic winery and farm. Poggerino is a winery located in Radda in Chianti in Italy, at the heart of the Tuscan wine region. Its a small vineyard and winery, 43 hectares with 11 hectares of vineyards with mainly sangiovese. They make a rose wine, primary purpose it to increase the quality of the red wine. The base red is called Il Labirinto made from sangiovese from young vines. Then they make a Chianti Classico Poggerino, aged for 12 months in French oak barrels a classic Tuscan wine with original character. Next is a Chianti Classico Riserva Bugialla, which is the name of a small vineyard plot with old wines. They also have an IGT (Indicazione Geografica Tipica) which is called Primamateria, which is more in a New World style (albeit Italian). The Chianti Classico is made from sangiovese. They also have some merlot planted which they mainly use for their super Tuscany. Some of the wines are aged in French oak barrels, barriques, but they dont want to get too much oak character. The ideal is to make wine with unique regional and terroir character. A genuine Chianti Tuscany / Italian wine producer.
