The Loaf chef Yukichi Matsubara demonstrates the preparation of his signature square brioche at the California Raisin workshop organised by Flavours magazine at Ajinomoto Malaysia's D'Umami Station. SQUARE CALIFORNIA RAISIN BRIOCHE (makes 10) Ingredients 160g high-protein (bread) flour 40g plain or cake flour 14g fresh yeast 80ml milk 40g egg yolk 34g honey 3.6g salt 20g unsalted butter, softened 120g California Raisins, washed with hot water 40g diced candied orange peel 160g cream cheese, chilled Almond topping 40g fine sugar 80g almond powder 80g egg white Decoration 50g almond flakes 10g icing sugar 20g white chocolate, melted in microwave, bain marie or double boiler 20 California raisins To make dough: Sift the flours together. Stir the yeast into the milk. Place the flours, egg yolk, honey, salt and milk-and-yeast mixture in the bowl of a mixer. Using the dough hook attachment, mix on low speed for 2 minutes. Add the butter and mix on medium-low speed for 8 minutes. Add the California raisins and candied orange peel, and mix on low speed for another 2 minutes. 2 Color Brioche Stitch in the round - crochet cast-on and set up round


Yes, I narrate part 1 and 2. I hope this is more helpful than the old versions. This clip shows just one method of casting on and the set-up round. Part 2 shows working the pattern rounds. This is a modified crochet cast-on, where there's a single chain stitch between each stitch on the needle. I misspoke in the video, it's not a very stretchy edge. It is slightly stretchy but very stable, and it is wide enough for the purpose of the piece. For something that would need to stretch freely, a tubular cast-on would be better. I prefer to cast on an even number of stitches and increase to a multiple of 3 with the set-up round. It's a personal preference. The pattern I'm using and noted on the blurry card in the background is the following: Cast on an even number of stitches in Main Color (MC). Set up round: (k1, yo, sl1) repeat to end. r1) (CC): (yo, sl1, p2tog) repeat to end. r2) (MC): (k2tog, yo, sl1) repeat to end. I do not demonstrate binding off as any will do, dependent on what sort of edge one wants. The crochet hook is only necessary for casting on this way, and if crochet details are desired. I say it will be used later because I plan to add a crocheted scallop to the edge in order to bind off (which isn't shown).

2 Color Brioche Stitch in the round - the pattern repeat

I don't show it in the clip as it was getting too long, but I like to end on a contrast color round, and then work a main color round of (k2tog, p1) and then bind off in whatever method gives me the edge I want. Please note, I'm a Combined knitter, so if my purling looks odd it's because of that. It's irrelevant, however, to brioche stitch since all the purls get slipped on the following pass and reoriented back to western. If that's incomprehensible, don't worry about it. Just know that it doesn't matter.

This is our first attempt at making brioche dough and our first try at shaping le pêtites brioches à tête (which literally means "little brioches with heads"). These classic French buns with topknots are fun to make, stunningly attractive and heavenly to eat. Although my partner does a stellar job in this video of shaping his very first petite brioche bun (and his first bread bun of any kind), I highly recommend checking out Ciril Hitz's YouTube video, "Brioche: A True Classic", to see how a pro does it. Ciril's fabulous video is invaluable for anyone wanting to learn how to form this classic brioche shape. We made the brioche dough using the "Middle Class Brioche" recipe from Peter Reinhart's must-have artisinal bread book: "The Bread Baker's Apprentice: Mastering the Art of Extraordinary Bread". The homemade pear jam featured in this video was made and generously given to us by my partner's wonderful mother. It's the perfect match for warm brioche (Thanks Mom!). My sweetie and I had a lot of fun making these together. Enjoy!

To start your decreases in the hat, begin right after the marker with main color (MC). Knit wise (kw) slip three stitches on the right needle (on brioche stitch, one single stitch and one more brioche stitch). Slip them back on the left needle and knit all three together. This is your left-slanted decrease. Next sl1stwyo (slip 1 stitch with yarn over), kclof2 (knit cluster of 2 = brioche stitch), sl1stwyo. So in abbreviated form it will be like this: Round 1 (MC) (first decrease): * sl 3 sts kw on the right needle, place them back on the left needle, and k3tog; sl1wyo, kclof2, sl1wyo: repeat after *.
