In this video, Betty demonstrates how to make Frozen Chocolate-Dipped Bananas. These are frozen treats that you can enjoy any time of the year—even in cold weather! Ingredients (for 4 servings): 2 whole fresh bananas lemon juice 6-oz. semisweet chocolate chips 6-oz. peanut butter chips ½ cup salted, roasted peanuts, finely chopped (I used an electric kitchen chopper to chop peanut halves into small pieces.) 4 popsicle sticks Peel 2 bananas, removing any banana fiber that clings. Cut each in half, crosswise. Place them in a small bowl and splash some lemon juice over them to keep them from turning brown. Insert a popsicle stick into the cut end of each banana and push it in far enough to hold the banana by gripping the popsicle stick. Line an 8-inch square pan with waxed paper, place the 4 prepared bananas on the waxed paper, and place them in a freezer until they are very cold. Now, melt 6 oz. chocolate in the top of a double boiler. When chocolate is melted, hold each banana by its popsicle handle, dip it into the melted chocolate, and use a spoon to get it covered completely. The chocolate coating will set up very fast, because the bananas are very cold. Place each chocolate-coated banana back on the waxed paper in the pan and return to the freezer until coating is very cold. The Frozen Chocolate Bananas are now ready to serve. If you like extra coating, melt 6 oz. peanut butter chips in the top of a double boiler and dip the end of the frozen chocolate-coated bananas <b>...</b>

Ingredients: 2 ½ pounds uncooked chicken breast, cut into 1-inch cubes (I used 1 ¼ pounds of sliced chicken tenders, but there is enough batter to coat twice as much. You may also use this batter for chicken tenders or half-breasts.) salt, to taste freshly ground black peppercorns, to taste 1 teaspoon active dry yeast ¼ cup lukewarm water (105 to 115 degrees F) ¾ cup water 1 egg, well-beaten 1 cup all-purpose flour ½ teaspoon salt peanut oil, enough to come up to 1-inch in a heavy pot Cut uncooked chicken breast meat into 1-inch cubes. Salt, to taste. Grind fresh peppercorns over the top, to taste. Mix together, cover, and let sit in the refrigerator for an hour or so. Combine ¼ cup lukewarm water and 1 teaspoon active dry yeast in the container of an electric blender. Let stand for 5 minutes. Add ¾ cup water, 1 well-beaten egg, 1 cup all-purpose flour, and ½ teaspoon salt. Blend for 30 seconds. Pour batter into a bowl. Dip chicken cubes into batter and deep fry in 1-inch peanut oil (350 degrees to 375 degrees F) until golden. Use a slotted spoon to remove the browned chicken nuggets to a platter covered with paper toweling to drain. Continue in batches until all chicken nuggets are cooked. Remove from paper toweling to a nice serving plate. These are terrific served with a sauce, such as Blazin <b>...</b>

In this video, Betty demonstrates how to make her Sweet and Salty Chocolate-Dipped Potato Chips. This is a quick and easy treat, and everyone loves them! Ingredients: potato chips (I used Lay's Classic and Lay's Kettle-Cooked. You may use other chips, too, even corn chips, crackers, pretzels, etc.) 12 oz. bag semisweet chocolate chips, or as needed (You may change the flavor to peanut butter, white chocolate, milk chocolate, or butterscotch, just by choosing different-flavored morsels.) In the top of a double boiler melt your desired amount of semisweet chocolate chips, maybe one-half the bag--or the whole bag. Choose chips that are fairly evenly sized and shaped. Individually dip each chip into the melted chocolate. Use a spoon to scrape off excess chocolate, and to even up your design. (I usually cover one-half of the chip--front and back--and then leave the rest plain.) Place each dipped chip onto a tray or platter that is covered with waxed paper. When you are finished, you can let the Chocolate-Dipped Potato Chips sit at room temperature to set up. Or, you can place them in the refrigerator, and they will set up very quickly. If your room temperature is warm, you may want to store these in the refrigerator until you are ready to serve them. Serve them as finger food at a party or get-together.
