Google Tech Talk March 26, 2010 ABSTRACT Presented by Benjamin T Stanley. This presentation will consist of a brief history, process, and science of fermentation. It will cover specific examples of various categories of fermentation including alcohol production, dairy/cheese making, vinegar/pickling, and baking. Samples of various products will be shared and open to discussion with the group to talk about. Benjamin T Stanley is a young aspiring chef, currently in the Chicago-land area. He holds a bachelors degree in Culinary Arts and Sciences from Kendall College ( Chicago, IL). He has background in many facets of the food industry including management, catering, nutrition, service, fine dining, research, and development. He is a national ranked chef with La Chaîne des Rôtisseurs, and has a passion for learning and teaching anything relating to the industry. He currently works for Bell Flavors and Fragrances, a local flavoring and ingredient manufacturer, as an application chef. He assists in developing flavors, creating industrial formulations, and testing food products for worldwide consumption.

I have 2 carboys, 25 litres each, bubbling away. 7 kilos of sugar in each with about 20 litres of water. Using 48 hour turbo yeast. My basement is cold, but these things are generating enough heat to keep themselves at a pretty optimal temperature. Should end up at around 20% alcohol within the next couple of days.

I've fermented my mash for three days now. The mash recipe is one to two cups corn meal to one cup sugar, confectioner's preferred, to one gallon water. On day three your solution should bubble vigorously when agitated. As the yeast produce carbon dioxide by digesting corn and confectioner's sugars. As the ethanol (alcohol) content rises, the yeast will die out. Keep waiting, and agitating, once or twice daily, until all bubbling stops.

That should get the yeast started and the beer fermenting. If the beer is not fermenting, then you probably used old yeast and may need to do the unthinkable... pour it down the drain. How to Make Fermented Dill Pickles


I love these traditional pickles. No vinegar is used in making them. The tart flavor comes from the fermentation action of the bacteria that lives on the skin of the cucumbers. They are fermented in a brine solution, which inhibits the action of other undesirable bacteria. For a half-sour style, only ferment them partially; they will be only "half sour". I'm told that these pickles will keep in the fridge for 6-8 weeks; though we always eat them long before then!
