Despite their richness on nutrition, nettles are not common in cooking. If you have them in the garden, this is a fine way to get rid of them. Use gloves! Otherwise, you can also use spinach only. Serves 4 1 pound (225 g) smoked trout or salmon, finely sliced) 4 cups (a little less than 1 l) loosely packed nettles 4 cups (a little less than 1 l) loosely packed spinach 1 cup (a little more than 2 dl) heavy cream 1 cup (a little more than 2 dl) chicken stock (or bullion) ½ tablespoon flaky salt 1 teaspoon finely chopped rosemary ¼ teaspoon finely grated nutmeg For the nettle and spinach soup: Remove the stem from the spinach and nettles. Transfer to a medium pot, add stock and cream, and place over medium high heat. Bring to a boil and let simmer for 10 minutes, until entirely collapsed, and the nettles thoroughly unarmed. Transfer the soup to a blender and pure until smooth. Return to pot and reheat over low heat. Add salt to taste. Transfer to serving bowls, and sprinkle with nutmeg and rosemary. Using your hands, clean the fish, removing any skin and bone. Cut the fish in bite-sized pieces, and arrange on top of the soup. Drizzle with yoghurt, and serve right away. Our video of the Tracy Arm Fjord during our Alaskan cruise simply does not do justice to this amazingly beautiful part of Alaska. Until recently, only kayaks were allowed into the Tracy Arm. Now, cruise ships somehow navigate the narrow fjord to the Sawyer Glacier. The weather was so good on the day we went that the ship got closer to the glacier than it had all season! It was amazing. Watch for icebergs, seals, waterfalls, mountain striations from the former glacier and especially note the color of the water. The change from black Pacific water to this teal green water was nearly instantaneous! The fjord is part of the 30 mile long Tracy Arm - Fords Terror Wilderness region, located about 60 miles southeast of Juneau. The fjord is truly one of the most dramatic locations in Alaska, or in all of the world, for that matter. The sheer, glacier-carved walls are often shrouded in mist. Glacial calving in Tracy Arm can often be quite spectacular, as huge chunks of ice break off and plunge into the frigid waters below. Unfortunately, we didn't get to see any calving on our cruise aboard the Celebrity Infinity. Literally hundreds of waterfalls cascade down the sides of the fjord, creating an almost otherworldly atmosphere. With warmer water conditions in recent years this hard fighting fish has become popular for the fly fisherman. The Norwegian Sea Bass are between 2 and 6lbs and need be pursued early mornings in the summer. Runar Kabbe has been the major contributor in opening up the knowledge and developing the techniques to take these fish with the fly. Runar's DVD will be coming out this December.

The clear stock is by itself a tremendous soup, and the meat, so tender it falls apart is a natural response to the gravest of cravings. Serves 6 2 pounds (900 g) ox tale, cut in slices 2 pounds (900 g) ox breast, shank or other tough meat suitable for long time simmering, cut in 1-inch dice 1 pound (450 g) undercut from sirloin or other tough meat, cut in 1-inch dice ½ pound (225 g) cabbage, finely shredded ½ pound (225 g) rutabaga, cut in 1-inch dice 3 bay leaves Small handful black pepper corns 1 egg white In a large pot over high heat, sear the ox tale until its nicely browned on all sides. Add the rest of the meat, and continue searing until browned. (You may need to remove the ox tale while searing the diced meat, as the meat will give away a lot of moisture, boiling rather than searing it. Return the ox tale when the meat is thoroughly seared.) Cover with water and bring to a boil. Reduce the heat to medium. Add bay leaves and black pepper, and let simmer for 3 hours or more. Remove the ox tale. Increase the heat to medium high, and bring to a boil. In a small bowl, separate the white from the yolk of one egg. Using a fork, whisk the white lightly. I cruised to Alaska with my son Casey. May 9th to May 16th, 2009. This is video from our cruise as we traveled up Tracy Arm Fjord. (Princess shot this as we cruised) The weather was absolutely amazing and we got all the way back to the Twin Glaciers. This is as far as a ship can go and most cruise ships rarely get all the way in. (26 miles of winding S turns through 3000 foot mountains) Check out the reflections of the mountains about half way through the video. The water was just like a mirror. Watch for the smaller cruising ship that passes us...it almost looks like a toy boat. The Star Princess went in first and we waited until she came back out. as there is not enough room for two ships at once to navigate through the narrow channel. She is the sister ship of the Golden (same size and layout) and as she passed us, we could get a scope of the size of the mountains that were surrounding us. This was an unforgettable experience and I was glad that they filmed it professionally.

Bluebird Lane Fjords presents a two-part video tutorial on how to cut a Fjordhorse mane. We get a lot of inquiries on the correct way to cut the Fjord mane so we produced this video to help. Fjordhorse manes are traditionally groomed to stand upright which enhances the appearance of the neck and draws attention to the black stripe which runs through the white hairs of the mane. We think it is important to keep every Fjordhorse's mane groomed in this traditional way. The mane should be trimmed every 4 to 5 weeks.
