What's For Dinner? Spring Split Pea Soup


Greetings! Today is Sunday and I needed to make something great, good tasting and hearty that we could enjoy for dinner because I knew that by the end of today I would be hungry after working all day in the garden! So I decided to exhume the hambone from Easter out of the fridge and make this delectable split pea soup full of spring veggies! Here is what you will need to make this recipe: 1 ham bone 2 cups (1 bag) dried split peas 1 Cup Diced Carrots 1 Cup Diced Celery 1 Large Onion Diced 2 Cloves Garlic, Chopped 6 Cups Water 2 Veggie Bullion Cubes 2 Ham Bullion Cubes 1 Teaspoon Dried Thyme 1 Teaspoon Dried Marjoram Place dried peas in colander and rinse and sort out any stones or odd things that may be in there. Rinse again set aside. Place ham bone in crock and add veggies, peas, water, bullion cubes and herbs. Set on high and cook for 1 hour on high and reduce to low setting for remainder of cooking time 6 -7 hours. Remove ham bone and ham with a slotted spoon, careful not to remove too many of the cooked veggies. Try to get as much of the ham and cartilage out as you can. I used my immersion blender to smooth the soup. Remove the ham from the bone and shred all of the usable ham. Add back into the crock pot and serve with your favorite bread or biscuit. Greetings! It's the middle of the week, and we are half way to Friday! Yay! So, because I did not plan anything specific for dinner and I didn't know what to make, I thought about eggs because we haven't had them for dinner in a while. Now, making breakfast for dinner can be more of a pain than not. It makes a giant mess and when your bring up the topic of omelette, everyone wants something different. Some people want cheese, some want ham, some want sausage and Rick always wants bacon. He always wants bacon anyway, so what to do? Make one big omelette in the oven, one way and everyone eats the same thing. There is no big mess and all you have to do is serve a green salad and some bread or like I did, some fried potatoes on the side. Everyone is happy and there are even some leftovers for breakfast tomorrow! You can make this anyway you like it, just because I only used some ham and cheese and some re-hydrated mushrooms, doesn't mean that you can't add your own twist, like broccoli, bacon, onions, tomatoes or even some leftover steamed salmon and goat cheese would be nice. Your choice. Clean out your fridge, save money and eat like a king! I hope you give this one a try and as always, Happy Eating!

Meal-in-one Baked Dinner Sandwich


Cut and pasted from Kraft Website with my comments added: 1 round breadloaf (or any shape) 1/4 cup Miracle Whip Mustard Mania Dressing I used 1/4 cup (75ml) mayonnaise and 2 heaping tablespoons of mustard 125 g deli-sliced ham (enough ham to fill sandwich) 1 medium tomato, sliced 1 small onion, sliced 1 cup (250g) Kraft Mozza-Cheddar Shredded Cheese (or whatever cheese you want to use) PREHEAT oven to 400°F. Cut a 1/2-inch-thick (1.5 cm) slice off top of round bread loaf. Remove interior of loaf, leaving a 1/4-inch-thick (6mm) shell. Spread all cut sides of loaf evenly with 1/4 cup (75ml) Miracle Whip Mustard Mania Dressing. FILL bread shell with layers of 125 g deli sliced ham, 1 each sliced tomato and onion and 1 cup Kraft Mozza-Cheddar Shredded Cheese. Wrap in foil. BAKE 30 minutes or until cheese is melted. Let stand 10 minutes before unwrapping and cutting into 4 wedges to serve. Since the sandwich filling will reduce in volume when baked, it is OK to pile the sandwich high and be generous with the filling ingredients. For best results, use a serrated knife to cut sandwich into wedges.

Greetings! Today was Sunday and we had planned to do a lot of different things around the house today, so a crock pot meal was in order. Simple, delicious and satisfying, beans and rice is a good way to sit down to a good meal at the end of the day with little effort. Big flavor and very filling, this amount will feed us for at least two dinners for the whole family as well as a lunch or two. Make this your own. Don't like black beans, use all red! Don't like ham hocks? Leave them out, throw in some ham or other smoked meat and you're good to go. Remember not to salt your beans before you cook them otherwise they will take lots longer to cook and also keep in mind that this is a great meal to use from your food storage. Throw your beans and dehydrated veggies in there with some canned tomatoes and you have a great meal made from your food storage. I cannot emphasize enough that you should really have a good number of food storage recipes available that you eat on a regular basis because we never know when we are going to have to rely on those precious stores to get us all by. Thanksgiving Turkey Pit BBQ - How to cook 96 Turkey plus a Ham or Two


This year we cooked 96 Turkey for our annual Thanksgiving Turkey Pit BBQ. We had a great time and the Turkey turned out perfect. Special thanks to Arnett Backhoe Service for digging our trench. It was 65' long x 5' deep and 2' wide. We had enough room for at least 4 more Turkey so next year we must break 100. Sassy C's came out with the ovens again this year and backed us Cinamon Rolls on site; they also brought dozens and dozens of Dinner Rolls and Pumpkin Pies for the Thanksgiving dinners... they were incredibly delicious as always. Jone's Kettle Corn came out for the first time this year and we are glad they did, absolutely the best Kettle Corn we have ever had; less than 24 hours later and I'm allready Jonesin for more, I guess that's why they call it Jone's Kettle Corn cuz you just can't get enough. If you are planning any type of event I highly recomend both Sassy C's and Jone's Kettle Corn they will make a big hit with your attendees. We are so greatfull to Greer Family Farm for hosting us again this year; they were most accomodating and we really appreciate them for providing the space for the pit and putting up with our ever growing pile of firewood these past 3 months. The firewood came from the Boy Scouts of Troop 82; they have been doing service projects in the neighborhood by cleaning up as many old, dead trees as they could and since most of it was Citrus the coals in the pit were perfect. Greetings, or should I say Happy Easter! The piece' de' resistance, the centerpiece, the one thing everyone anticipates at Easter, as much as the Turkey at Thanksgiving..........The Ham! Now, in my opinion, you can't have Easter without a big beautiful succulent ham, covered in sweet pineapple, studded with spicy cloves and beautified with candied cherries. Pineapples and cherries are like jewelry for my ham. Cover the lot with a generous portion of brown sugar, put it in the oven, all covered up and cozy for a warm sauna nap and what do you get? Pure Easter Heaven! So simple, so delicious and so budget friendly! Remember, ham is always on sale this time of year so it's good to get an extra to throw in the freezer for when you want the classic taste of Easter in the middle of the summer or for back to school. You'll get lots of meat for dinner and leftovers of sandwiches and casseroles but the best, best part is the ham bone that you will get to freeze and use to season beans or bean soup or collar greens or pea soup, well you get the picture.
