In this video, Betty demonstrates how to make White Chocolate-Macadamia Nut Cupcakes. This recipe is very quick and easy, and the combination of flavors provides a special treat! Ingredients: 2 ½ cup all-purpose baking mix (I used Bisquick.) ½ cup sugar 3 ounces coarsely chopped white chocolate (You may use white chocolate chips, if you like.) 2.25-ounce package chopped macadamia nuts (about ½ cup) ¾ cup half-and-half (This is half milk and half cream.) 3 tablespoons vegetable oil 2 teaspoons vanilla extract 1 egg, well beaten In a large mixing bowl, combine 2 ½ cups baking mix and ½ cup sugar. Add 3 ounces of crumbled white chocolate and a 2.25-ounce package of chopped macadamia nuts and stir. Mix together ¾ cup half-and-half, 3 tablespoons vegetable oil, 2 teaspoons vanilla, and 1 well-beaten egg. Stir into dry ingredients. Stir just until dry ingredients are moistened. Spoon equal portions of batter into 12 muffin tins containing paper liners. Fill 2/3 full. Bake at 400 degrees (F) for 10 to 12 minutes, testing occasionally with a toothpick. When a toothpick comes out clean, the cupcakes are done. Remove cupcakes from oven and immediately place on a nice serving plate. These are wonderful when served warm, but you may also serve them at room temperature or chilled. With Mother's Day coming up, if you don't want to commit to making a cake, this is a smaller project that everyone will enjoy! I hope you like it! --Betty 

She's definitely got our vote! ------ Coconut Cream Pie with Macadamia-Ginger Snap Crust Serves 8 For the Crust 1 cups (100 g) ginger snaps 1 cup (135 g) macadamia nuts, toasted 2 tbsp (25 g) sugar 1 tsp (5 mL) salt 5 tbsp (75 g) butter, melted For the Filling: ½ cup (100 g) sugar 4 large egg yolks ⅓ cup cornstarch Pinch salt 1 cup (240 mL) whole milk 1- 14 oz. (415 mL) can coconut milk Splash rum For the Topping: 1 pint (475 mL) heavy cream 1 cup (90 g) sweetened shredded coconut, toasted Preheat the oven to 400°F (205°C). In a food processor, pulse the ginger snaps until they are finely ground into crumbs. Dump into a bowl and set aside. Add the macadamia nuts and pulse until they are also finely ground and add to the bowl. Stir in the sugar, salt and butter until everything is well incorporated. Press the crumb mixture into a 9" (23 cm) pie pan and par-bake for 10 minutes, or until the crust has set. Take out of the oven and cool. While the crust is baking, start on the filling. This is a recipe from one of Joanne Fluke's books, Blueberry Muffin Murder. 1 cup melted butter 3/4 cup white sugar 3/4 cup brown sugar 2 teaspoons vanilla 1 1/2 teaspoons baking soda 1/2 teaspoon salt 2 beaten eggs 2 1/4 cups unsifted flour 2 cups real white chocolate -- (or white chocolate (1/2 pound) chips) 1 1/2 cups macadamia nuts -- chopped (measure before chopping) Directions Preheat oven to 350°F, rack in the middle position Melt the butter. Mix in the white sugar and brown sugar. Then mix in the vanilla, baking soda, and salt. Add the eggs and stir again. Add the flour and mix thoroughly. If you're using block white chocolate, chop it up into pieces roughly the size of chocolate chips. You can do this in a food processor by cutting the chocolate in chunks and processing it with the steel blade. If you're using white chocolate chips, just measure out 2 cups. (You can use vanilla chips, but the cookies won't taste the same.) Measure out the whole macadamia nuts. Chop them into pieces roughly the size of peas with a knife, or use your food processor and the steel blade. Add the white chocolate and nuts to your bowl and mix thoroughly. Drop the dough by teaspoons onto an UNGREASED cookie sheet, 12 cookies to a standard-size sheet. Bake at 350°F for 10 to 12 minutes or until nicely browned. Let the cookies cool for two minutes, then remove them from the baking sheet and transfer them to a wire rack to finish cooling. Number of Servings: 48

This is an imitation of the dessert Rick and I had at our Valentine's dinner at Murray's Restaurant in Lexington, Kentucky on February 14. It is a moist, dark brownie, baked in the oven, and served warm with caramel sauce and slightly chopped macadamia nuts. Yum! Ingredients: 3 eggs, well-beaten 1 1/2 cups sugar 1/3 cup flour (this may be all-purpose or self-rising.) 1/3 cup cocoa 3/4 cup butter, melted 1/2 teaspoon vanilla extract cooking oil spray jar of caramel sauce macadamia nuts, slightly chopped In a large bowl, combine 3 well-beaten eggs, 1 1/2 cups sugar, 1/3 cup flour, 1/3 cup cocoa, 3/4 cup melted butter, and 1/2 teaspoon vanilla. Stir well, until completely blended. Pour into a deep dish pie plate that has been sprayed with cooking oil spray. Bake for about 25 minutes, until set. You can check for doneness by inserting a clean toothpick in the center, and it will come out clean when the chocolate cobbler is done. Remove cobbler from oven, and let it cool at bit before serving. Meanwhile, heat caramel sauce in a small saucepan until very warm. Chop macadamia nuts slightly. (I used an electric kitchen chopper for this.) Serve the chocolate cobble while warm. Spoon out a generous amout of chocolate cobbler in a nice serving bowl or plate. Here, Teresa Gascoyne demonstrates how to make this delicious dessert as easy as possible. Since this is an advance baking level, you need a little practice and lots of passion to get the skills needed to perfectly make this. If you are making this in the Philippines or simply wants the filling thicker, you have two options: reduce the water to 1/8 cup and/or increase the corn syrup 1 teaspoon at a time until it reaches the consistency that you desire (I use a total of 3 teaspoons) . The filling shouldn't be too thick, you should be able to spread it easily. I use Reynolds Genuine Parchment Paper to bake the egg white mixture because the regular wax paper sticks so badly.
