Morchella, the true morels, is a genus of edible mushrooms closely related to anatomically simpler cup fungi. These distinctive mushrooms appear honeycomb-like in that the upper portion is composed of a network of ridges with pits between them. These ascocarps are prized by gourmet cooks, particularly for French cuisine. Morels are a feature of many cuisines, including Provençal. Though morels are typically sold dried or canned, they can be purchased fresh. When preparing fresh morels, never soak them as this will ruin their delicate flavor. * Toxicity: Morels contain small amounts of toxins that are usually removed by thorough cooking, and morel mushrooms should never be eaten raw. It has been reported that even cooked morels can sometimes cause mild poisoning symptoms when consumed with alcohol.

Salmon is a popular food. Consuming salmon is considered to be reasonably healthy due to the fish's high protein, high Omega-3 fatty acids, and high vitamin D content. Salmon is also a source of cholesterol, ranging 23--214 mg/100g depending on the species. According to reports in the journal Science, however, farmed salmon may contain high levels of dioxins. PCB (polychlorinated biphenyl) levels may be up to eight times higher in farmed salmon than in wild salmon. Omega-3 content may also be lower than in wild caught individuals, and in a different proportion to what is found naturally. Omega 3 comes in three types, ALA, DHA and EPA; wild salmon has traditionally been an important source of DHA and EPA, which are important for brain function and structure, among other things.

The brill, Scophthalmus rhombus, is a species of flatfish in the turbot family (Scophthalmidae) of the order Pleuronectiformes. Brill can be found in the North Atlantic, Baltic Sea, and Mediterranean Sea, primarily in deeper offshore waters[[1] . The brill have slender bodies, brown with lighter and darker coloured flecks covering its body, excluding the tailfin; the underside of the fish is usually cream coloured or pinkish white. Like other flatfish the brill has the ability to match its colour to the surroundings. Brills are on average between 40cm to 75cm in length and weigh up 3 kg. Part of the dorsal fin of the fish is not connected to the fin membrane, which gives the fish a frilly appearance. They are sometimes confused with the Turbot (Psetta maxima), which is more diamond-shaped.

A poached egg is an egg that has been cooked by poaching. No oil or fat is used in its preparation. Poached eggs are used in Eggs Benedict and Eggs Florentine. The egg(s) are cracked into a pan of water that has just boiled (but is not boiling) and simmered until the egg white has mostly congealed, but the yolk remains soft. Most chefs seem to agree that the 'perfect' poached egg has a runny yolk, with a hardening crust and no raw white remaining. The essential factor is to use totally fresh eggs; although this may be difficult unless chickens are kept. Broken into boiling water, the white will stay clinging around the yolk, and you will end up with a perfect ball of cooked white and runny yolk. All eggs tend to 'spread', whether frying or poaching, the older they are. Even a week will do this, and it is very difficult to find shop-bought eggs that are fresh. Most commercial eggs, even organic, will be 2-3 weeks old. Hence the need, as outlined below, for vorticēs, cling-film, and the like. A certain amount of practice is necessary to prevent the white of the egg dispersing into the water. One way to help prevent this effect is to add a small amount of vinegar to the water. It also helps to stir the water vigorously to create a vortex just before dropping the cracked egg into the water, or to break the egg into a cup and lower the lip below the water's surface before releasing.
