Baked Eggplant Patties


RECIPE - Baked Eggplant Patties The Vegetarian Librarian www.veglib.com 1 large eggplant 1 cup olive oil (approximately) 1 cup breadcrumbs 1/2 tsp sea salt + 1 Tbs 1/4 tsp garlic powder fresh ground pepper Peel eggplant in stripes longways, leaving some of the skin on. Remove ends and cut in 1" slices. Place slices in a strainer, cover with about a tablespoon of sea salt and let drain for about a half hour to remove bitterness. Preheat oven to 400 degrees. In a shallow bowl, combine breadcrumbs, 1/2 tsp salt and spices. Place eggplant slice in breadcrumb mixture, cover evenly and tap off any extra breading. Place on a well oiled cookie sheet. Repeat until all are covered with breading. Drizzle with olive oil and bake for 15 minutes. Remove pan from oven, flip patties, drizzle with a little more oil and bake for another 15 minutes. If slices still aren't crisp to your liking, flip the patties again and bake for another 5 minutes. Great with pasta or for sandwiches!

I invented Cooking!!!! • 2 lbs ground turkey or beef • 8 sprigs of fresh thyme or 4 tablespoons • 2 oz scallion or about 10-13 stalks • 2 scotch bonnet peppers, seeded • 2 loaf french bread • 6 cups water • 2 tablespoons Jamaican Keith complete seasoning's • 2 teaspoons garlic powder • 2 teaspoon onion powder • 2 teaspoon ground allspice • 2 tablespoon beef base • 2 tablespoons browning • 2 teaspoon msg (optional) • 2 small onions • 2 oz gelatin • 2 teaspoon salt Directions 1. Grind scallion/onions, and peppers in a mincing mill. 2. Add to ground beef/turkey with all other seasonings 3. Cook without adding any water or fat until meat has lost its broth and only certain amount of oil remains. 4. While meat is being cooked, pour sufficient cold water over bread in a saucepan to cover and soak for a few minutes, 5. Pass bread/ little water through mincing mill until it is a semi thick paste. This found in an e-recipe book called Secret Recipes, sent to me by Dave (2theleftofnowhere). Thanks Dave! 1 (14−ounce) (I used a 300ml can) can Sweetened Condensed Milk (NOT evaporated milk) 1 tablespoon peppermint extract (15ml) green or red food coloring, optional 6 cups confectioners' sugar (250ml measuring cups) Additional confectioners' sugar 1 16 oz. bag semi−sweet chocolate chips (450g bag) In large mixer bowl, combine Eagle Brand, extract and food coloring if desired. Add 6 cups sugar; beat on low speed until smooth and well blended. Turn mixture onto surface sprinkled with confectioners sugar. Knead lightly to form smooth ball. Shape into 1−inch (2.5cm) balls. Place 2 inches apart on wax paper−lined baking sheets. Flatten each ball into a 1 1/2 inch patty (3cm) . Let dry 1 hour or longer; turn over and let dry at least 1 hour. Melt the chocolate chips in a microwave set on high for 2 minutes. Stir halfway through the heating time. Melt thoroughly, but do not overheat. Melting the chocolate chips can also be done using a double−boiler over low heat. With fork, dip each patty into warm chocolate (draw fork lightly across rim of pan to remove excess coating). Invert onto wax paper−lined baking sheets; let stand until firm. Store covered at room temperature or in refrigerator. **when dipping peppermint patties do it quickly, put it in, flip it over quickly take it out quickly and let the excess drip off slightly.
