Dress up dinner! Fried sage leaves

Fried sage leaves are an easy way to add some pop to presentation, noted Rob Sargent, chef of Sage restaurant in Odawa Casino Resort in Petoskey. Heat oil in a large skillet or frying pan until it's hot. To test temperature, dip a sage leaf into the oil; it should start to fry immediately. Move the leaves around as they cook, but be careful to not overcook the leaves; they finish in less than a minute. Use to garnish any dish from meats and vegetables to sides. Find a video of the technique at www.thegraphicweekly.com.
