www.lightscameracook.com Recipe 1 boneless pork loin, about 5 to 6 pounds 4 to 6 slices bacon Rub Mixture: 1 teaspoon chili powder 1/2 teaspoon paprika 1 1/2 teaspoons salt 1/2 teaspoon coarse ground black pepper 1/2 teaspoon ground cumin 1 teaspoon ground cinnamon Glaze: 1 cup light brown sugar, packed 2 tablespoons flour 2 tablespoons cider vinegar 1/2 teaspoon dry mustard Heat oven to 350°. Place pork loin in a roasting pan. Combine the rub ingredients and rub over the pork. Cut each strip of bacon in half crosswise and lay them over the pork loin. Roast for about 1 1/2 to 2 hours, or until the pork registers about 150°. In the meantime, combine the brown sugar, flour, cider vinegar, and dry mustard in a saucepan. Bring to a simmer and simmer for about 1 minute. Spoon over the pork and return to the oven. Roast for about 15 to 20 minutes longer, or until pork registers 160°. Serves 6 to 8.

In this video, Betty and her husband, Rick demonstrate how to make Rotisserie Grilled Pork Loin with Rosemary. The pork loin is marinated in a blend of olive oil and minced fresh rosemary for about 4 hours. It is then seasoned with salt, pepper, and olive oil, and placed on an outdoor rotisserie grill and cooked until browned and tender. This is a great alternative to oven roast pork! Ingredients: 4 to 5 pounds uncooked boneless pork loin 2 tablespoons minced fresh rosemary (If you are using dried rosemary, use only 2 teaspoons.) salt, to taste freshly ground black peppercorns, to taste extra virgin olive oil for marinating and for coating before grilling Place the uncooked pork loin in a pan or dish that is approximately the same size as the pork loin. Rub 2 tablespoons freshly minced rosemary all over the pork loin. Drizzle enough extra virgin olive oil over the pork loin to make a nice coating. Turn to coat all parts. Chef Jason Hill shares a Pork Tenderloin recipe that's topped with a Zinfandel, Bing Cherry and Roasted Onion Warm Compote. This roast pork recipe uses just a few ingredients and is perfect for a dinner party or weeknight meal. It's one of the easiest pork recipes out there designed for the home cook. To prepare this pork loin recipe you'll need: 2 1/2 pounds boneless pork tenderloin, removed of most fat 2-4 tablespoons olive oil Fresh sea salt and cracked pepper 3 fresh onion slices Drizzle a couple tablespoons of olive oil on both sides of the pork loin and rub into the meat. This video features a southwestern pork rub that packs this tenderloin full of flavor. This is a delicious slow cooker pork roast with a sweet and lightly spiced glaze. Serve this pork loin roast with mashed potatoes and your favorite side dish of vegetables. I enjoy recipes that I can just do light prep work and then forget it (well, you know you have to keep a little watchful eye on it, but I don't have to be standing over a stove for hours). I was inspired to try this slow cooker recipe from the link below the directions. INGREDIENTS: 1 boneless pork loin roast, 4 - 6 pounds 1 teaspoon garlic powder or 1 garlic clove, halved Salt, pepper, and/or other seasonings to taste 1 1/3 cups brown sugar, divided (I used half brown and white sugar) 1 Tablespoon spicy brown or Dijon mustard 1 Tablespoon apple cider vinegar or balsamic vinegar 1/2 - 1 cup of liquid (your choice: broths, juices, water, wine, or a mixture) 1/4 teaspoon ground cinnamon DIRECTIONS: Rinse pork roast, trim excess fat, pat dry, and season with garlic powder or rub with garlic halves. Sprinkle with salt, pepper, and other seasonings to taste (I used onion powder and Italian seasoning too). Then, prick the roast all over with a fork or skewer. In a bowl or cup, combine 1 cup of brown sugar, mustard, and vinegar. Rub all over the roast. Put pork into the slow cooker. Cover and cook for 1 hour on LOW. After the hour, add 1 cup of liquid. How To Butcher Meat: Pork Loin


Thought I would do something a bit different and upload a chef video. I like to cook and one thing i've been doing for about 8-10 years now is buying then butchering my own meat. With Boneless Pork Loins I take them and take off most of the fat then divide them up how I want. This usually gives me a roast, 2-4 1/2 inch thick boneless pork chops, and 2-4 1/4 inch thick porkchops (If I only do 2 1/2 inch thick pork chops). WARNING: I use a VERY sharp knife which can easily cut me. I'm using this video to demonstrate the techniques and skills I use to butcher meat. This video is informational and you must be very cautious when using any type of sharp object including knives. Also at mark 2:15 to mark 2:18 DO NOT DO WHAT I DO cause you can easily slice your finger open. I am skilled with a knife to a certain degree that I can do this 90-95% of the time without getting cut. ( If you are just starting out learning how to cook always slice away from you NOT towards you.) Also to note you don't need a Sho knife or a Santuku knife. Any 3-4" and 6-7" knife with an adaquately sharp blade will do.

Stuffed Pork Tenderloin 2 trimmed pork tenderloin 1 cup dried black mission figs, coarsely chopped 1 cup crumbled blue cheese 1 tsp. salt 1 tsp. fresh ground black pepper 1/4 tsp. sage 1/4 tsp. thyme 5 tbs. mild garlic 1/2 cup apricot jam Butterfly tenderloin lengthwise and lay out flat. Pound to tenderize and sprinkle the garlic, figs, seasonings and blue cheese over pork, leaving a 1/2" border around outside edges. Roll up the pork and secure at 2" intervals with twine. Lightly brush each tenderloin with oil and season with pepper. Place 3/4 chimney full of briquettes on cooking table and place an oiled 14" camp oven over the coals to preheat. Sear both tenderloins for a few minutes to seal the meat. Bake at 450˚for 15-20 minutes (One ring of coals under the oven & two rings of coals on the lid) Brush melted jam over the pork and continue to bake until a thermometer registers 155˚-160˚. (5-10 more minutes) Let stand at least 10 minutes before removing the twine and slicing.

Slow cooked (or crock pot) Pork Loin, with vegetables. 1 big cut of pork loin 1 big onion, chopped into chunks 1 bag of small sweet carrots 2lbs of small red potatoes, cut into wedges 1 tub of mushrooms, maybe 1lb or so you'll also need salt, pepper and minced garlic. Brown the meat in a little olive oil. Add to crock pot, cover with minced garlic. add vegetables and cover with water. cook for 7-8 hours.

Apricot Mustard Glazed Pork Tenderloin


www.lightscameracook.com Recipe 1¾ lb boneless pork tenderloin, trimmed, cut into 4 pieces and pounded into thin cutlets 2 cloves garlic, chopped 1/3 cup Nobilo Sauvignon Blanc 1/4 cup The Fresh Market Armenian Apricot Jam 1 tbsp Honeycup honey mustard TFM Extra Virgin Olive Oil salt and cracked black pepper to taste Heat a large nonstick skillet coated with olive oil over medium heat until hot. Meanwhile, sprinkle salt and cracked black pepper to taste over pork cutlets. Add pork to preheated skillet, and cook for 2 to 3 minutes per side, or until barely pink in the center. Add garlic and quickly sauté until fragrant, about 1 minute; add wine to the skillet, scraping up any browned bits. Combine TFM Armenian Apricot Jam and honey mustard and add mixture to pan. Cook until bubbly and hot, turning pork once to coat with glaze.

In the Kitchen with Ken: Smoked Pork Tenderloin


For the dry rub 1 tablespoon dry mustard ½ tablespoon salt 1 tablespoon garlic powder ½ teaspoon red pepper ½ teaspoon white pepper 2 tablespoons chili powder 1 tablespoon paprika 1 tablespoon black pepper ½ teaspoon coriander 3 tablespoons brown sugar 1 tablespoon sandia pepper Two 1½ pound pork tenderloins Mix all the dry ingredients in a small bowl. Rub generously on the pork tenderloins. Place the tenderloins in the refrigerator for at least two hours. You could even prepare them ahead and let the rub absorb into the meat overnight. Preparing the grill Place aluminum foil on the bottom of the grill to catch any drippings. In the side box, place a large stack of charcoal and light it. Once the charcoal has cooked down, start adding pieces of soaked hickory or another wood you prefer. Continue adding charcoal as necessary to keep the temperature between 350 and 400 degrees. Place the meat on the center of the grill and cook for two hours over indirect heat. If the temperature gets too high, add some wet wood to the fire to bring down the temperature. Once the pork is cooked through, slice and serve.
