To complete this How-To you will need: A sharpening stone, also known as a "Japanese waterstone" A bowl of water large enough to hold the stone A kitchen towel A flat, stable surface A dull knife A honing steel or ceramic sharpening rod Step 1: Soak stone Soak the sharpening stone in a bowl of water for 5 minutes. Tip: Avoid oil stones-they are difficult to use correctly, even for culinary professionals. Step 2: Place stone Remove the stone from the water and place it on a towel on a stable surface. Make sure the coarse side faces up. Step 3: Hold knife If you're sharpening a chef's knife, hold it semi-parallel against the stone at a 20-degree angle with one hand on the handle and the other on the top part of the blade. The fact that your tools are new means they're nowhere near ready for use. This may not match your expectations, but it's true of nearly every hand tool (and most power tools) that you might ever acquire. It's not that the tools weren't made well; they almost certainly were. But the job of the person in the foundry where your planes were made, for instance, is to make tools that look just like planes, and to be sure there are not fatal flaws that would keep them from working. That foundry worker doesn't use the planes (he'd surely get in trouble if his supervisor caught him making shavings on the job!), and he probably isn't a woodworker anyway. Machete Field Sharpening (3 of 13)


Being able to sharpen a machete in the bush is key to living there for any length of time. On this six day trip I had taken along my diamond rod which I use for maintaining the edge, and a small mill file that I use for removing edge damage. Since Giuliano had a small coarse stone we had used that to polish off some edge damage rather than the file. This short video shows the use of the diamond rod. Sorry for the hand held quality of this video, it was shot sort of like a target of opportunity during what is very much a part of every day camp life in the bush. Field sharpening is just one of many camp chores that you make sure you do every day.

hi everyone! first off, this video is less of a tutorial and more of a demonstration. it didn't totally turn out the way i wanted it to, but it is what it is. secondly, murray carter makes amazing knives and this one is one of my favourite knives to use. ok, so i'm sharpening a wide beveled murray carter gyuto on the scary sharp system. the scary sharp system basically started out as sharpening on sand paper. now we have 3m micro film to play with, and it comes in an array of grit sizes ranging from 80 micron down to .3 micron. now, this video shows how a wide beveled knife is sharpened. knife makers like takeda, moritaka, yoshikane, shigefusa make gyuto's, nakiri's, santoku's and other knives with big grinds, and this is how i personally sharpen them. i usually don't use the scary sharp system to sharpen these knives, but for some unknown reason, i felt compelled to. i originally wanted to sharpen a cleaver on it. HOW TO USE SCARY SHARP SYSTEM: ======================================== ==== ok, so how i usually sharpen with these papers is very similar to how i use japanese waterstones. i move up the grit ladder until i'm finished polishing the knife. simple. typically, i'll count the number of strokes i make on each side of the knife so that there's an even grind on both sides. usually i'll start out with 15 strokes on each side, check for burr. (if there isn't then i'll do 15 strokes on each side untill there is.) if there's a burr then i'll go 13 on each side. then 10 <b>...</b>

Free Hand Sharpening by Nutnfancy


After like a hundred requests I'm compelled to do a sharpening video...maybe more to follow. Using an EZE-LAP Fine Diamond oval shaped diamond sharpener (Knivesplus.com, EZ-D10F, $19) and a 13" Lansky sharpening steel, I show how I re-sharpen an AG Russell kitchen knife. Keep your edge angle very consistent on both rods, using enough passes to bring out the edge you desire. The diamond stone actually produces micro serrations in the steel which will cut very effectively. I find the edge is more durable and even sharper however if honed a bit on the steel, using care not to roll the tip (in video). I do use other systems occasionally but this is my current favorite. That's because this is the fastest way I'm able to bring out an edge again in a knife. Note: Suppliers and models of the referenced sharpeners will change. I note my original sources for reference and to maybe help save you time.
